Best Stir fry Potatoes

Best Stir fry Potatoes (Chef Ramsey Inspired)

Ingredients:
2 large potatoes/ 6 small potatoes (chopped into mouth size)
Salted water (pinch of water + hot water)
55g of unsalted butter
Pinch of salt
2 tablespoon of Olive oil
1 inch of ginger (chopped and juiced)
Garlic powder
Black pepper
Rosemary leaves (chopped)

Directions:
1)Scrub potatoes in running water and chop potatoes leaving skin on.
2)Boil salted water and transfer chopped potatoes into pot and heat for approximately 15 minutes till it looks half cooked and soften.
3)Let it cool for 10 minutes.
4)While waiting, prepare pan and simmer olive oil.
5)When its hot, place the potatoes with skin facing up onto the pan. Must be gentle when doing this to prevent potatoes from being smashed.
6)Add ginger and together with its juice onto potatoes.
7)Add salt and pepper for taste.
8)Add butter in the middle and rosemary and let the potatoes brown.
9) After it turns golden brown, slowly transfer it to a plate and its ready to serve.

Side note:
1)Do not add too much salt in salted water nor on pan as it may be too salty.
2)Find a good pot that will fit all the potatoes.
3) Do not force sqeeze all boiled potatoes inside the frying pan.

Cinnammon Rolls (Cinnabon Copycat)


I was intrigued by the famous Cinnabon that Ali Baluch @baluchx kept mentioning about in Twitter. I had a craving over cinnabon but sadly it is nowhere sold in Singapore. But the good thing, it is Easy to make and I mean it. It takes practise to roll though but you'll get it soon! We made a 'Copy-cat Cinnabon' that tasted as yummy as it looks. Delis-yo-to!!


Nope, I did not get the rolling correct at first attempt. The secret to perfect roll is to start rolling from the longer edge or side if you call it and be very gentle when slicing it. The way to slice is by using a greased knife or a long floss to cut about 1 and a half inch rolls.

Tightened the rolls before placing it in the greased baking tray and let it sit for about 20 to 30 mins to let it rise! Yippee!

After baking till golden brown. Let it cool for a bit and glaze cream cheess frosting on top. That's the bestest part of all. Don't be afraid to try. Its very delicious and I planned on baking a variety kind of rolls: Lemon Rolls using lemon jelly fillings, and Nutella Rolls next time. It is very delicious and is worth the try!!

The recipe is as below inspired from Pinterest recipes. I substituted brown sugar with dark brown sugar (gula melaka powder) and mix it with a tablespoon of cinnamon. It tasted really good! If you like to substitute brown sugar with castor sugar is fine too. Remember to use cinnamon powder ofcourse - the smell of cinnamon right from the oven was heavenly. Worth the effort! 😍

Sayur Lodeh (Lontong Gravy)




Ingredients:
50g dried anchovies/ ikan bilis (soak in water)*
50g dried shrimps  (soak in water)*
6 candlenuts (soak in water)*
1 teaspoon shrimp paste or belacan (optional)*
3 onions about 250g*
3 garlics*
1 tablespoon chilli paste
1 teaspoon turmeric powder
1 teaspoon cumin powder
1 teaspoon fennel powder
1 tablespoon coriander powder
1 lemongrass (crushed) 
25g galangal(crushed)
4 daun salam or bay leaves
1 medium size carrot (cut into stripes)
1 small size turnip (cut into stripes)
50g cabbage (cut into big pieces)
50g long beans (cut into 5cm length)
200ml Kara coconut milk
3 or 4 cups water
2 tablespoon vegetable oil
2 teaspoon salt
1/2 tablespoon sugar(optional)
4 small size bean curd cakes(deep-fried)
*ingredients need to be pounded or blended with 1 cup of water

Method:
  • Heat oil in a pot till hot. 
  • Stir-fry chilli paste, blended ingredients, turmeric powder,cumin powder,fennel powder and coriander powder. 
  • Add in galangal and lemongrass.Cook till fragrant.  
  • Pour in water and bring to boil over moderate heat.
  •  Add in daun salam/bay leaves, carrot, long beans, turnip and cabbage. 
  • Cook till vegetables are softened. 
  • Add in deep-fried bean curd cakes, sugar and salt.
  • Pour in coconut milk and stir for a while.
  • Turn off the flame. 
  • Arrange compressed rice cakes(lontong) on serving dish. Add sayur lodeh, sprinkle with serunding (spicy grated coconut). Top with halved egg.  Serve with sambal(chilli paste) for those who like it hot.

Ingredients

1 red snapper (about 700g)
1 onion (100g)- sliced
1 or 2 tablespoon chilli paste
4 garlics- sliced
1 inch or 2.5cm ginger-sliced
1 tablespoon sweet soya sauce
1 tablespoon  tomato sauce
1 tablespoon vinegar or lemon juice
2 tablespoon tauchu (wash and mash coarsely)
sugar and salt to taste
1 tablespoon cooking oil

Ingredients:

  • 6 slices of bread
  • 6 chicken sausages
  • 1 egg 
  • Breadcrumbs (for coating)
  • oil for frying


Methods:

  1. Boil the Sausages in hot water.
  2. When cooked, remove the sausages from the water.
  3. Break the egg into a bowl and beat lightly.
  4. Take a slice of bread, cut the edges and then place the sausage on the bread. 
  5. Roll the bread. Repeat this method to the rest of the breads and sausages.
  6. Heat oil for frying.
  7. Dip bread roll into the egg and roll it on the breadcrumbs, before frying.
  8. Fry the bread roll till golden brown.
  9. Drain well.
  10. Serve hot with chilli sauce .

Meatball Spaghetti


  • Meatball Spaghetti

      Ingredients
      400g spaghetti
      2 teaspoon salt
      2 teaspoon olive oil / cooking oil
      2 litres water 
      Method
      Boil water in a pot.
      Add in spaghetti, salt and olive oil /cooking oil in the boiling water.
      Boil the spaghetti for 8 to 10 minutes.
      Drain away the water and put aside.

      Meatballs
      500g minced beef
      1 onion (50g) chopped finely
      2 cloves garlic chopped finely
      quarter cup fresh parsley (chopped)
      1 egg
      half cup breadcrumbs
      white pepper powder
      1 teaspoon salt
      oil for frying
      Method
      Put all the ingredients except the oil, in a bowl.
      Mix all the ingredients evenly and shape into balls.
      Heat oil in frying pan.
      Fry the meatballs until lightly brown.
      Remove the meatballs from the frying pan and put them aside.

      Spaghetti Sauce
      2 tablespoon olive oil
      2 tablespoon chilli paste
      2 cans tomato paste (1 can =170g)
      4 medium size onions (200g) chopped finely
      4 cloves garlic chopped finely
      4 fresh tomatoes (diced)
      1 bay leaf
      quarter cup fresh oregano/ dried oregano leaves (chopped)
      quarter cup fresh parsley leaves (chopped)
      half cup sugar (4 tablespoon)
      salt and black pepper powder to taste
      2 or 3 cups water
      half cup grated parmesan cheese (garnishing)
      Method
      Heat olive oil in a large saucepan.
      Saute  the onions and garlics until soft.
      Add in chilli paste,tomato paste,fresh tomatoes and bay leaf.Fry till fragrant.
      Then,add in water,sugar,salt. pepper,oregano,parsley and the fried meatballs into saucepan.
      Stir the  sauce evenly.
      Cover the saucepan,reduce the flame to low heat.Simmer for 30 minutes or until the sauce has thickened.

      Serving
      Serve spaghetti topped with meatballs in sauce and sprinkle with grated parmesan cheese.

    Simple Fruit Cupcakes

    Ingredients
    • 100 g self raising flour
    • 75 g butter
    • 75 g brown sugar or Castor sugar
    • 25 g currants
    • 25 g almonds- roast & chop (optional)
    • 50 g mixed peel
    • 25 g glace cherries- sliced
    • 2 eggs
    • 2 tablespoon milk
    • 1 tsp vanilla essence
    Method
    1. Sift the flour in a separate bowl.
    2. Cream the butter and sugar until mixture is thick and creamy.
    3. Beat eggs with the milk and add vanilla essence to the creamy mixture. Beat well.
    4. Fold in the flour gently with a metal spoon and lastly add the dried fruits.
    5. Scoop into cupcake cases or baking tin.
    6. Bake in a preheated oven at 180 'C on the middle shelf- 15 to 20 minutes for small cakes, 40 minutes  for large cakes.
    7. Place cupcakes on cooling rack to cool after baking.

    TIPS:
    ~ You could also use mixed fruits too.

    Ingredients:

    4 ripe bananas 
    1  1/2 cup self raising flour
    1/2 cup sugar
    1 egg
    salt 
    oil for deep frying



    Method:

    Peel and mash the bananas with sugar.
    Sift the flour and mix into the banana mixture.
    Then add in the salt ( according to taste) and mix evenly.
    Heat oil for deep-frying.
    Drop the mixture, a spoonful at a time into the hot oil.
    Fry until golden brown.
    Drain well before serving.
    Serve hot on a plate.

    Beehoon Noodles/ Fried Fish Soup


    Beehoon Fried Fish Soup


    Ingredients

    Beehoon noodles(rice vermicelli)
    400g beehoon 
    Scald the beehoon noodles for 1-2 minutes in boiling water.Drain and put aside.

    Fried Fish Fillet.
    1 kg frozen dory fish fillet
    Corn flour (coating)
    1/2  level teaspoon salt
    1/2  level tablespoon  sugar
    white pepper
    Method
    Cut the fish fillet .
    Marinate it with salt,sugar and pepper for 20-30 minutes.
    Coat the fish fillet with corn flour.
    Deep fry till golden brown.

    Soup
    1 thumbsize ginger(slice)
    1 medium size onion  about 50gram(cut into 4)
    2 pandan leaves/screwpine leaves(tie into a knot)
    2 cubes chicken stock
    2 stalk spring onions(cut into 3 cm)
    white pepper
    salt
    sugar
    2 tablespoon olive oil/cooking oil
    4 litres water
    Method
    Heat olive oil in a pot.
    Fry the ginger and onion until fragrant.
    Pour in water and bring to boil.
    Add in pandan leaves,chicken cubes,salt,sugar,white pepper and spring onions.
    Allow soup to simmer for a while before removing from heat.


    Sweet Chilli  Soya Sauce.
    10 bird's eye chillies / 4 red chillies(finely slice)
    2-4 tablespoon sweet soya sauce
    2 tablespoon fresh small lime juice


    Serving.
    Put cooked beehoon noodles into individual serving bowls.
    Pour soup over noodles.
    Garnish with fried fish fillet,spring onion,tomatoes and crisp fried shallots.
    Serve hot with sweet chilli soya sauce.

    Homemade Mashed Potatoes


    Homemade Mashed Potatoes


    Ingredients ( Mashed Potato )

    • 3 russet potatoes (boiled & mashed)
    • 1 tablespoon milk
    • 1 tablespoon butter
    • white pepper powder
    • a pinch of salt    

    Method for Mashed Potato
    1. Mix all the ingredients together with the mashed potatoes.
    2. Shape into a ball

    Gravy Sauce
    • 1 teaspoon corn flour
    • 1 cube chicken stock
    • 1 tablespoon butter
    • 1 teaspoon dark soya sauce
    • 1/2 teaspoon sugar
    • 2 tablespoon black pepper powder
    • 1 1/2 cup or 1 cup of water
    Method for Gravy Sauce

    1. Melt the butter in a saucepan over low heat.
    2. Then, pour in the water in the saucepan.
    3. Add in the chicken stock and let it dissolve in the water.
    4. Add the dark soya sauce, sugar, black pepper powder and let it boil.
    5. Lastly, add in the corn flour and boil until it thickens.
    6. Strain the gravy sauce before serve.

    Banana Pancake ( Pancake Pisang )


    Pancake bake by my dearest daughter. 

    Ingredients:

    • 2 tablespoon sugar
    • 2 tablespoon butter ( melted )
    • 2 eggs
    • 1 1/2 cup 'Blue Key' self-raising flour 
    • 1 cup milk/ evaporated milk
    • a pinch of salt
    • a few slices of ripe bananas
    • 1 teaspoon vanilla / banana essence
    Method :
    1. Beat the eggs and sugar.
    2. Add in the milk and stir evenly.
    3. Fold in the self-raising flour into the mixture.
    4. Add in the salt, melted butter, a few slices of banana and vanilla / banana essence.
    5. Use a non-stick pan to cook the pancake. Pour onto the heated pan and cook on both sides until golden brown.
    6. Can be served with honey / butter / jam or a few slices of bananas.



    Bahan-bahan:


    • 2 sudu besar gula
    • 2 sudu besar mentega (cair)
    • 2 biji telur
    • 1 1 / 2 cawan Tepung Berserbuk Penaik 'Blue Key' 
    • 1 cawan susu / susu cair
    • secubit garam
    • beberapa potong  pisang yang masak ( seperti digambar)
    • 1 sudu kecil perasa vanila / pisang 

    Cara-cara:



    1. Pukul telur dan gula.
    2. Masukkan susu dan kacau hingga sebati.
    3. Masukkan tepung ke dalam adunan.
    4. Masukkan garam, mentega cair, beberapa potong pisang dan perasa vanilla / pisang.
    5. Gunakan kuali leper non-stick untuk memasak pancake. Tuangkan adunan ke dalam kuali leper yang dipanaskan dan masak pada kedua-dua belah sehingga perang keemasan.
    6. Boleh dihidangkan dengan madu / mentega / jem atau  beberapa potong pisang.

    Bread pudding (Kuih Talam Roti)

    Ingredients

    • 150g bread ( soak in water for 5 minutes )
    • 100g plain flour
    • 2 eggs
    • 150g sugar
    • 250ml coconut milk/evaporated milk
    • 250ml water
    • 1 level teaspoon salt
    • 1 teaspoon vanilla essence
    • a few drops of yellow & green food colouring

    Method

    • Strain the soaked bread and squeeze out the excess liquid .
    • Beat the eggs and sugar in a mixing bowl .
    • Add in the vanilla essence , salt , bread mixture , and coconut milk / evaporated milk . Mix well .
    • Add in the flour and mix well .
    • Divide the mixture into 2 portions .
    • 1 portion yellow colour and another portion green colour .
    • Grease the baking tin with melted butter .
    • Pour in the yellow portion into the baking tin and steam for 30 minutes .
    • Then pour in the green portion and steam for another 30 minutes until cook .
    • Allow to cool completely before cutting .

    Oreo Cheese Cake 

    Recipe :

    Ingredients:

    A: BISCUIT BASE

    • 5 packet oreo cookies ( 1 pkt (29.4g)) remove cream  & crush the cookies
    • 25 gram unsalted butter (melted)
    B: FILLING
    • 250 gram cream cheese ( philadelphia) leave at room temperature
    • 80 gram caster sugar
    • 100 ml dairy whipping cream
    • 1+1/2 teaspoon gelatine powder( melted in 45 gram boiling water)
    • 1 packet oreo cookies (29.4g) crushed into big chunks
     C: TOPPINGS
    • oreo cookies 
    • cherries

    Method:

    A:
    1. Mix the crushed oreo cookies with melted butter and pressed into base of a round baking tin.( recommended to be springform pan). 
    2. Chill in the fridge for approximately 1 hour .
    B:
    1. Beat the cream cheese with sugar and also add dairy whipping cream.
    2. Beat until smooth.
    3. Mix in gelatine mixture .
    4. Then add in the chunk cookies.
    • Pour the cream cheese mixture onto the oreo cookies base which have been chilled .
    • Chill in the refrigerator for 2 - 3 hours or overnight.
    • Decorate the toppings with oreo cookies / cherries or even icing sugar...^^

    Kuih Talam Keledek (Sweet Potato)








    My first time making 'sweet potato talam' for my child birthday.
     It tastes really sweet and nice.


    Ingredients

    A: Purple Layer 
    • 300 g purple sweet potato ( boiled and then  mashed)
    • 75 g rice flour
    • 75 g tapioca flour
    • 150 ml coconut milk/ milk
    • 150 ml water
    • 200 g sugar
    • a little salt 
    B:White Layer
    • 100 g tapioca flour
    • 200 ml coconut milk/ milk
    • 200 ml water
    • 2 tablespoon rice flour
    • a little salt
    Method

    A: Purple Layer

    1. Blend all the ingredients together
    2. Pour into the greased baking tin
    3. Steam for 20 or 30 minutes
    B:White Layer

    1. Blend all the ingredients together.
    2. Pour mixture over the purple layer.
    3. Steam for another 30 minutes until cooked.
    4. Allow to cool completely before cutting
